Bareilly Biryani
Bareilly Biryani can be called a secular biryani. Bareilly is a secular city where there is a confluence of all cultures. Bareilly Biryani reflects this in the range and choice of spices.

Hyderabadi Biryani
From the kitchen of the Hyderabad’s Nizam, there are two types of Hyderabadi Biryani – Pakki and Kacchi. The Pakki Hyderabadi Biryani involves cooking of basmatic rice and meat separately and then layering them together. The kacchi Hyderabadi Biryani is made from the raw marinated meat (chicken or lamb) placed between the layers of basmati rice infused with saffron, onions and dried fruits, both are slow-cooked in a dough-sealed earthen pot over charcoal fire.

Lucknowi Biryani
Awadhi Biryani, as Lucknowi Biryani is called has a unique cooking style, known as dum pukht. The meat infused with spices is partially cooked separately from rice, which is flavoured with saffron, star anise and cinnamon. Both the meat and rice are then layered together in a handi and cooked for hours until the flavors deeply penetrate.

Calcutta Biryani
Calcutta Biryani is similar to the Awadhi style biryani of Lucknow. It has a tinge of sweetness and more sparing use of spices. It is cooked with light yellow rice, which is layered with yogurt-based meat, soft boiled eggs and potatoes. Saffron, nutmeg and kewra add to aroma to the biryani.

Thalassery Biryani
Hailing from the Malabar region of Kerala, Thalassery Biryani is Sweet and Spicy. The Thalassery Biryani makes use of an indigenous variety of rice – Khyma or Jeerakasala – instead of the basmati rice that is used traditionally. Other ingredients include Malabar spices, meat or chicken, fried onions, fennel seeds, sauteed cashews and raisins. The rice is cooked separately from the meat, and mixed together only at the time of serving.

Bombay Biryani
Bombay Biryani is composed of chicken, mutton or vegetables, fried and spiced potatoes, kewra water (screw pine) and dried plums that make the flavor sweet, tangy and aromatic.

Sindhi Biryani
From Sindh province of Pakistan, this biryani is made from chopped chilies, roasted spices, mint and coriander leaves, onions, nuts, dried fruits and sour yogurt. Added to this biryani are plenty of plums and potatoes.

Kalyani Biryani
Kalyani Biryani originated from the Bidar city of Karnataka. Consisting of buffalo meat, spices, coriander and tomatoes, the Kalyani biryani is tangy.

Dindigul Biryani
Dindigul Biryani can be found across Chennai. It is strong and tangy in flavor, which is derived from curd and lemon, mixed with cube-sized meat and jeera samba rice. Pepper is used in full measure.

Ambur Biryani
Ambur Biryani also has meat, but the way the meat is prepared is different. The meat is soaked in curd and flavored with coriander and mint, and then added to the cooked Seeraga samba rice, along with other spices. Brinjal curry or ennai kathirikai is served along with Ambur Biryani.

Tehari Biryani
This biryani was created for the vegetarian Hindu bookkeepers at the Mughal court, and since then, it has become one of the popular dishes among vegetarians. This biryani consists of potatoes, carrots, several veggies and spices.

Brief History Of Bareilly
Bareilly was founded in 1537 by Jagat Singh Katehriya, a Rajput who named it Bareilly after his two sons Bansaldev and Baraldev. Bareilly is a city in the Indian state of Uttar Pradesh. It is the capital of Bareilly division and the geographical region of Rohilkhand. The city is 252 kilometres (157 mi) north west of the state capital, Lucknow, and 250 kilometres (155 mi) east of the national capital, New Delhi. Bareilly also lends its name to the Barelvi Movement, which follows the Sunni Hanafi school of jurisprudence.

The first Indian wedding ceremony in an Indian jail was at Bareilly Central Jail which housed Yashpal, a Hindi-language author, who is sometimes considered to be the poor man’s Premchand. Yashpal won the Hindi-language Sahitya Akademi Award for his novel, Meri Teri Uski Baat in 1976 and was also a recipient of the Padma Bhushan. Yashpal married while imprisoned on 7 August 1936.

Bareilly is the 50th-largest city in India. Bareilly also figured amongst the PM Narendra Modi's ambitious 100 Smart City list in India. Bareilly is located on the Ramganga River and is the site of the Ramganga Barrage built for canal irrigation. Bareilly lies on the National Highway 30 according to the new National Highway system in India. The newly numbered highway connects Sitarganj in Udham Singh Nagar district, Uttarakhand with Ibrahimpatnam in Andhra Pradesh.

The Indian Air Force has a base at Izzatnagar, on the outskirts of Bareilly on the Nainital Road. A civil enclave has been made on the airbase at Pilibhit Bypass Road near Mayur Van Chetna Kendra. Bareilly Airport was inaugurated on 10 March 2019 at the civil enclave of Trishul Air Base.

The city is also known by the name Nath Nagri for the seven Shiva temples located in the Bareilly region – Dhopeshwar Nath, Madhi Nath, Alakha Nath, Tapeshwar Nath, Bankhandi Nath, Pashupati Nath and Trivati Nath, and historically as Sanjashya, where the Buddha descended from Tushita to earth.

Uttarayani fair is organized every year at the Bareilly Club ground in Civil Lines. The fair is held from 13 to 15 January on the occasion of Makar Sankranti. Cultural events are held in Kumaoni and Garhwali languages, in which many artists from the nearby hill region come to perform. The Nariyawal fair is the second largest fair of the city. The fair takes place on the occasion of Gupt Navratri in the temple complex of Goddess Sheetla located at Nariyawal. The fair is mainly a religious affair which is attended by devotees from far-flung districts in addition to the nearby villagers.

The cuisine of Bareilly has a great influence of Mughal cuisine and culture, hence there are many non-vegetarian dishes that are popular here. The delicacies ranging from Seekh kebab to tandoori chicken, Nahari, Paya are ready to delight the sense of the food lovers visiting this city. Chaat is famous street food of Bareilly and is made by mixing a variety of fruits and boiled potatoes that are shallow fried. A lot of spices and lemon juice are added to it to make it tasty and spicy.

Zahid Hussain, better known by the pen name Wasim Barelvi, is an Indian Urdu-language poet. He was born in Bareilly, Uttar Pradesh. His ghazals, many sung by Jagjit Singh, are very popular. He has been awarded with the "Firaq Gorakhpuri International Award", the Kalidas gold medal ; the Begum Akhtar Kala Dharmi award; and the Naseem-e-Urdu award. Barelvi is Vice Chairman of the National Council for Promotion of Urdu Language (NCPUL). He has also performed at Culrav 2012. He is also Member of Legislative Council of Uttar Pradesh since 2016.
